Thoumieux opened its boutique hotel quietly in April. The Jean-François Piège (ex Crillon) / Thierry Costes collab already had all the food critics yapping, with the opening of the downstairs brasserie early last year. In October, the upstairs gastronomic restaurant opened and already boasts 2 Michelin stars.
